This section contains some of my favorite
easy recipes. If u need a break out of the kitchen u should really be
trying these.
Take a look around; you're sure to find one you'll love!
All of the spices used will be readily available in your nearest grocery
store.
Some of these recipes are actually a combination of American and Indian
spices to give it a really spicy kick!

1. Easy Rasam (my
husband’s favorite...) |

Servings: 2 adults
Medium Sized ripe Tomato chopped- 2
Tamarind Juice/Paste (Thick) - 1 Tbsp
Crushed Garlic - 2-3 pods
Turmeric- 1/2 tsp
Rasam Powder - 2 tbsp
Curry Leaves - a few
Coriander leaves - a few chopped.
Oil - 2tbsp
3 medium size cup of Water.
Salt to taste
Seasoning:
Mustard - 1 tsp
crushed chilly powder-as per taste
In a heavy bottom pan, pour 2 tbsp of Oil and season it.
Add Crushed Garlic and stir for a minute. Add chopped Tomatoes and
Salt. Stir it till the tomatoes are made to a paste. Add Turmeric and
Rasam Powder and stir for a few seconds. Then add the Tamarind Paste.
Mix everything well.
Add Curry leaves, Coriander leaves and Water. Leave it in slow flame
to boil. Appx takes about 7-10 mts.
TIPS:
1. You can also use garlic paste instead of the usual ones which u buy
fm store. That really saves time on crushing them.
2. In the end, if you like, you can sprinkle asafetida (Kayam) powder.
It is usually contained in Rasam Powder.
3. Try adding some cumin seeds when seasoning....quite fast to do and
retains the thickness even a day after.

2. King fish fry
with coconut milk |

|
servings: 2 adults
Kingfish
Onion -1 big
Ginger garlic paste-1 tsp
Chilly-2-3
Curry leaves-a few
Kodampuli-2-3 pods
Marinate:
Turmeric powder- half tsp
Coriander powder-1 ½ tsp
Kashmiri chilly poder-1/2 tsp
Cinnamon powder-a pinch as desired
For garnish:
Parsley
Lemon-half
Tomato-1
First of all cut and clean the king fish into medium size cubes.
Marinate the fish with a pinch of turmeric powder, coriander powder,
chilly powder and a pinch of cinnamon powder to give a nice smell.
Keep it for an hour. In a non stick pan fry the fish until they turn
golden brown and harder a little bit .don’t overcook the fish. Add oil
if they stick to the bottom of the pan.
In a non stick pan pour 3 tsp of EVOO (Extra virgin olive oil).fry the
curry leaves, chilly and ginger garlic paste until the paste gets
light brown. Be careful not to burn the ginger garlic paste .Add
kodampuli soaked in water. Next, fry the onions till they turn brown.
Now add the cooked fish to the onion mix. Add salt a little bit of
water and cover and cook these guys for 2 minutes. Turn off the heat
and add coconut milk as desired.
Finally my personal favourite, presentation!
U can garnish it with parsley leaves chopped and tomatoes cut into
circles. Add some lemon juice.
TIPS:
1. I prefer using extra virgin olive oil coz they give a juicy flavor
a nice pleasing smell and richness.
2. Using Kashmir chilly powder gives nice color to the recipe and less
spicy for this one.
3. Do not add too much water coz we don’t want gravy .we need as a
fry. Also kingfish absorbs lot of water while washing .So even if we
don’t add water, there will be enough water coming out of the fish.
4. Try peeling off the skin of the fish before cutting. Skin comes out
well when it is still in frozen stage. This can be done by taking out
the skin a little bit with a knife and peeling off with your hand
straight. Quite easy!

3. Prawn Til Tikka |

|
servings: 2 adults
Shrimp 10 nos
All purpose flour –for mixing
Soy sauce-2 tsp
Chilly powder-1 tsp
Pepper poder-1/2 tsp
Egg -1
Maida –a little
Make a paste with egg ,soy sauce, chilly powder, pepper powder and
make it a thick consistency by adding flour as desired .batter should
be thick so that shrimp is fully coated. Then, marinate shrimp with
this paste. Keep it for 15 minutes.
Coat shrimp with bread crumbs .fry them in EVOO (Extra virgin olive
oil) until they turn pink
and light brown.
Garnish with tomatoes, onion and coriander leaves. For sourness u can
add a little bit of lemon too on the shrimp. Serve with chapatti or
poori.
TIPS:
1, Don’t overcook shrimp coz shrimp will become harder also it takes
about 2 min on each side to cook shrimp on light medium heat.
2, You can substitute soy sauce with lemon juice if you don’t have in
handy.
3, You can also add Maida instead of bread crumbs.

4. Vegetable stir
fry with Shrimp |

servings: 2 adults
Vegetables-carrots, potatoes, onions, capcicum (red and yellow
preferred)
Onions-1, carrots -2, capsicum-half each.potatoe-1 big
Shrimp 10
Turmeric powder- a pinch
Coriander powder-1/2 tsp
Chilly poder-1/2 tsp
Salt –to taste
Coriander leaves
Wash and cut all the vegetables lengthwise like u make for aviyal.Cook
the veges in a steamer .Don’t fully cook the vegetables so that it
wont get smashed while stirring.
In a hot skillet add some EVOO (Extra virgin olive oil), add all the half cooked veges,add the
masalas ,add shrimp and let them cook until shrimp turns pink in
colour .salt as required.
Garnish with coriander leaves ,add lemon juice for sourness if
required and serve with chapattis
TIPS:
1, cook veges in steamer rather than in water, coz it retains its
nutritional value.
2, chilly powder can be adjusted to your taste. This is the way I like
it most.
3, it is better to half cook the veges coz the other half will be
cooked by the time shrimp is done. Otherwise veges will be smashed and
will not come out the way we want to.

5.
Noodles for Adults & Kids (My son love this !!!) |

servings: 2 adults
If your child don’t like to eat veges, then this is a great trick to
make them eat. Children love noodles. Try adding some colorful veges
in that. Be creative with veges .They will love! What they need is
colorful foods and funny looking shapes! Try out this recipe for your
loved ones.
Noodle-1 packet maggi or any noodle
Celery-2 stems
Capsicum-yellow, red and green
Carrots-2
Chilly sauce –as needed (light hot)
Ketchup – (as needed)
Boil 2 cups of water and add noodles and cook’em for 2 min .drain off
water and keep it aside. Wash and cut all the vegetables lengthwise
.slice one small onion .fry them in a skillet with EVOO (Extra virgin olive
oil) for a couple
of minutes. Add all the vegetables and cook them till done. when veges
are done, pour some chilly sauce & ketchup and mix .finally add the
drained noodles into the vegetable mix and mix everything well so that
its well coated with ketchup and chilly sauce.
TIPS:
1, you can buy either extra hot chilly sauce or mild chilly sauce,
mild would be better for kids.
2, adding ketchup depends on your child’s taste.
3. There is no need to wash the celery, just wipe with a damp cloth.

6. Dry Mushroom Dish |

servings: 2 adults
Mushroom-1 pound
Onion-half cup small
Ginger garlic paste-1 tsp
Chilly -2/3
Turmeric powder-a pinch
Chilly powder-1/2 tsp
Coconut shredded –as required
Mustard seeds-a few
Curry leaves-a few
Wipe and clean mushroom with a damp towel or tissue. Slice them with
medium thickness. Slice small onion half cup and chilly .in a deep
skillet add some EVOO (Extra virgin olive oil) ,pop mustard seeds .when they starts to splutter
add karivepilla(curry leaves),ginger garlic paste and onion .fry onion
until translucent. Now add mushroom and cook for 3 min covered then
add some coconut shredded, salt turmeric powder and chilly powder. Fry
them for another 5-8 minutes until well fried with no moisture.
TIPS:
1. Do not wash mushroom coz it absorbs water and the dish will be
watery.
2. Do not overcook mushroom as this causes mushroom to turn black
color.
